Quick Supermarket-style Lunch Meal

Mediterranean Salad

1 small zucchini, grated or peeled in ribbons using a potato peeler
1 Quinoa & Co Mixed Quinoa with Eggplant Caponata
1 piece of Sandhurst char-grilled capsicum, sliced
Small handful of rocket
1 small chunk of feta, crumbled
4 Sandhurst kalamata olives, halved

Place everything into a bowl and dress the salad with the eggplant caponata

Sunday Meal 

Quinoa Arancini


- 2 x Quinoa & Co White Quinoa (plain – 1 x double pack)
- ¼ cup passata or Napoletana pasta sauce
- 1 packed cup grated mozzarella
- 1 egg, beaten
- ½ cup bread crumbs or corn crumbs (if gluten-free)
- ¼ cup olive oil
- 10 x mini bocconcini (1cmx1cm)
- Salt and pepper to taste

1. Place Quinoa & Co White Quinoa into a saucepan with passata and mozzarella on a low heat
2. As the mozzarella starts melting, start mixing with a spoon, pressing the mixture firmly into the sides of the saucepan to get the mozzarella to coat the quinoa
3. After it is well combined, remove from heat and set aside for 2-3 minutes to cool
4. Once cool to touch, portion mixture into ten equal portions
5. Place 1 mini bocconcini into the middle of each portion of mixture and gently shape the portion into a sphere
6. Repeat with all ten balls
7. Once you’ve rolled them all, start with the first ball again and dunk into the beaten egg
8. Then toss in breadcrumbs and place onto a plate
9. Repeat until all are coated in egg and breadcrumbs
10. In a frypan, heat olive oil on a medium heat
11. Place all 10 arancini balls into the pan and cook until golden brown, turning occasionally
12. Serve on a green salad or keep in the fridge for up to three days

Quick Supermarket-style Lunch Meal


- 1 wholegrain wrap
- 1 Quinoa & Co Red Quinoa with Peppers, Cabbage and Lentils
- Small handful of spinach leaves
- Sliced chicken breast from the deli or rotisserie

1. Spread the wrap with the Pepper, Cabbage and Lentils
2. Layer spinach leaves then press quinoa down evenly
3. Place sliced chicken on top and tightly roll the wrap up
4. Enjoy straight away or make extra for weekly lunches
